Instapot Zuppa toscana inspired winter soup
Quick Easy version
Simple easy Zuppa Toscana
Prep time: 15 minute 
Cook time: 30 minute (Active 5 min) 
Serves: 6 servings  
Ingredients:    
- 1 lb of potatoes (about 5 small/medium or 2-3 large potatoes ), diced 
- 6 cups of chicken broth 
- 1.5 tsp of salt / 2 tsp coarse salt 
- 2 medium onion (about 1/2 lb), diced 
- 4 sausages (about 12oz), chopped 
- 3-6 cup of chopped kale (without stem) 
- 3/4 cup of half and half / vegan creamer (2 tbsp per bowl) 
- 1 tsp of minced garlic 
- (Optional) 1/2 tsp chili flakes 
Cooking Tools:
- Instapot 
Directions :
- Add all the ingredients except the half-and-half, salt, and kale into the instapot. Set the instapot to manual and cook on high pressure for 20 minutes. 
- When the instapot has finished cooking, release the pressure after 10 minutes and stir in the kale and salt. 
- Spoon into serving bowls. Add 2 tbsp of half and half/vegan cream into each bowl and serve.

Zuppa toscana inspired by Olive Garden

Cook time: 45 minute (Active 20 min)
Serves: 6 servings  
Ingredients:    
- 1 lb of potatoes (about 5 small/medium or 2-3 large potatoes ), diced 
- 6 cups of chicken broth 
- 1.5 tsp of salt / 2 tsp coarse salt 
- 2 medium onion (about 1/2 lb), diced 
- 4 sausages (about 12oz), chopped 
- 3-6 cup of chopped kale (without stem) 
- 3/4 cup of half and half / vegan creamer (2 tbsp per bowl) 
- 1 tsp of minced garlic 
- 2 tbsp of avocado oil 
- (Optional) 1/2 tsp chili flakes 
Cooking Tools:
- Instapot 
Directions :
- Set the instapot on saute. Add 1 tbsp of oil to the pot. 
- Add garlic and onions. Saute for 2 minutes. 
- Add sausage, potatoes, and broth. Set the instapot to manual and cook on high pressure for 20 minutes. 
- When the instapot has finished cooking, release the pressure after 10 minutes and stir in the kale and salt. 
- Spoon into serving bowls. Add 2 tbsp of half and half/vegan cream into each bowl and serve. 
Cooking Tip:
- Don’t let the creamer boil or it’ll separate. (Don’t add it in too early) 
- I chop and freeze my kale in large batches. This makes it much easier on the prep work, and my kale is more tender. 
- Choose the sausage you use depending on the flavor profile you prefer (e.g. sweet, spicy, etc).
