Instapot simple sweet adzuki bean dessert

Cook time: ~45 minute
Serves: 6-8 servings

Ingredients:

  • 1 cup of adzuki / small red beans, soaked overnight

  • 3 tbsp of palm sugar, or 5 tbsp of maple syrup

Cooking Tools:

  • Instapot

Directions :

  1. Wash and soak the red beans overnight.

  2. Rinse the beans and add them into the instapot with 4 cups of water. Pressure cook for 20 minutes and let the instapot naturally release the pressure.

  3. The process will be similar whether you’re making the paste, or dessert.

  4. Drain the water from the instapot. If you’re making the dessert, reserve the bean water to add back later. If you’re making the bean paste, you don’t need the water.

  5. Add palm sugar / maple syrup to thSoe beans into the instapot, and set the instapot to saute mode. Stir the sugar in while crushing the beans to thicken into paste. You’re done when the end result is a thick red bean paste.

Cooking Tip:

  • Soaking the beans overnight will make them significantly more digestible. So while you can skip the soaking by increasing the instapot cooking time, I generally recommend soaking if you can.

  • If you have digestive issues, adding a small bit of Kombu into the instapot while cooking will help breakdown the bean further, making them even more easy to digest.

Rich in minerals, folate, and B vitamins, adzuki beans is one of the most popular dessert item in East Asia, and frequently eaten as a sweet dessert by itself, or added into other baked goods, breads, mochi rice cakes, ice creams, etc. It is also rich in anti-oxidants and reduces inflammation, and according to TCM, warming properties that’s perfect for the winter months.

With all beans though, moderation is key as beans can be harder to digest in large quantities, and adzuki bean’s high potassium content makes it necessary to eat in moderation for anyone with kidney issues (though great for everyone else).
