Simple Feta Beet salad
Simple beet salad for getting some vegetables in this week
Prep time: 5 minutes
Serves: 2 servings   
Ingredients:    
- 1 pack of prepared beets, about 8oz 
- 2 tbsp of extra Virgin olive oil 
- 2-4 tbsp of crumbled Feta cheese 
- (Optional) Diced fresh parsley leaves, about 3 stalks worth 
- Small sprinkle of salt, about 1/2 tsp 
Cooking Tools:
- Bowl for mixing everything together 
Directions :
- Dice the beets into 1 inch cubes. Add to a serving bowl. 
- Crumble feta on top, top with chopped parsley, and drizzle olive oil. Lastly, sparingly sprinkle salt over the dish. I used salt flakes and crumbled them a bit in my hand while sprinkling. 
- Mix, serve, and enjoy! 
Cooking Tip:
- this is one dish were using salt flakes does make a difference in the flavor of the dish. I would highly recommend it if you have it on hand to use instead of salt grains.

Though beets taste so much better fresh, sometimes we just don’t have the time to process, roast, peel, and prepare the beet. 
I typically keep a couple packages of prepared beets on hand, to whip up a quick veggie side when we have feta around.
High in folate to help with healthy red blood cell formation along with a healthy dose of iron, beets are high in antioxidants and great for the colder autumn and winter months as a warming food for the body. Just don’t be alarmed when it turns your urine pink - it means the antioxidants are effectively traveling through your body!
