Egg scramble with greens
Part 4: Egg scramble with greens (side dish)
Prep time: 15 minute 
Serves: 4 servings  
Ingredients:    
- 4 eggs 
- 3/4 tsp of salt 
- 1 cup of aromatic/leafy greens (I used celery greens, but you can also use thai basil, baby spinach, or cilantro) 
- 1 tbsp of avocado oil 
Directions :
- Crack the eggs into a bowl. Add salt and beat the eggs. 
- Heat a saute pan with oil for 1 minute. 
- Add in the egg mixture, and top with greens, cooking over medium heat. 
- Flip the egg after 3-5 minutes when the bottom has browned, serve when the egg is gently browned on both sides. 
Cooking Tip:
The salt can be replaced with fish sauce for that extra umami kick.

Eggs are nutritious and delicious. But the information out there on eggs is also dizzily confusing. Here’s my preference, from most preferred to least preferred, when it comes to eggs:
- Pasture raised (hen have room to roam and feed on bugs) 
- Organic free range (hen have room to roam and fed organic grains) 
- Organic (hen fed organic grains) 
- Free Range (hen fed conventional grains with some outdoor space) 
- Convention / all natural (hen fed conventional grains)

One of my favorite ingredients, eggs are both nutritious and delicious and so versatile in many recipes. It is a good source of B vitamins critical for your brain function, energy level, and cell metabolism, and gives your body a start on its daily mineral needs.
