Toasted Coconut Chocolate Chia Seed Pudding - 椰香巧克力嘉布丁

Prep time: 5 minute
Serves: 2 servings

Ingredients:

  • 1/2 cup of Chia Seeds

  • 2 cups of water

  • 1/4 cup of almonds or almond flour

  • 1/4 cup of large toasted coconut flakes, or 1/8 cup of fine toasted coconut flakes

  • 4 tbsp of Cocoa powder

  • Maple syrup to taste (1 tbsp is what I normally use but use 2 if you like yours sweeter)

Cooking Tools:

  • Vitamix blender

Directions :

  1. Add everything into the blender and mix on high for ~2 minutes until everything is smooth.

Cooking Tips:

  • This smooth creamy recipe inspired by my friend Sandy’s idea of putting chia seeds in the blender creates a delicious pudding that could easily be mistaken for a far less healthy dessert. The perfect quick recipe for a healthy but decadent everyday celebration at home.
