Simple Mole Sauce

Prep time: 15 minutes
Cooking time: 20 minutes
Serves: 6-8 servings
Ingredients:

Spices:

  • 1 teaspoon of ground cinnamon

  • 1 tbsp of ground cumin

  • 1 teaspoon of ancho pepper

  • 2 tbsp of paprika

  • 1 tbsp of dried oregano

Everything else:

  • 2 tablespoons of avocado oil

  • 1 diced onion

  • 2 tbsp/4-6 minced garlic cloves

  • 3 cups of chicken/vegetable stock

  • 1/8 cup of soaked almonds or 2 tbsp of almond butter

  • 1 tbsp of tomato paste

  • 2 tbsp of cassava flour (or any 1:1 gluten-free flour)

  • 1-2 tbsp of maple syrup (even better if you have smoked maple syrup)

  • 1 tbsp of unsweetened cocoa powder

  • 1 teaspoon of salt

  • 1/2 bar of chocolate (about 1.5 oz)

  • 2 tbsp of dried onion flakes/powder (flakes provide a better texture)

Cooking Tools:

  • A good blender and skillet

Directions :

1. Add the oil into the skillet. Turn the heat up to medium-high, then add the garlic, onion, and saute for 5 minutes.

2. Add in the spices and cassava/1:1 flour, and cook for another minute before turning off the fire. Remove from the stove and let it cool for 15 minutes (or longer).

3. Add everything into the blender, run until everything is smooth, transfer back into the skillet, and cook until the sauce reaches a simmer and thickens.

Cooking Tip:

  • Making this recipe with homemade bone broth makes it even more flavorful!

  • Make sure you really load up on the sauce with anything you decide to add to it. We made some delicious pork arepas but it would’ve tasted even better lad we lathered on more sauce on top of the arepas!
